Lemon Posset Dessert

Serves twelve

36fluid ounces of double cream
225 grams caster sugar
Juice of 3 lemons

Heat cream and sugar to dissolve sugar and bring just to boiling point
Remove from pot and add lemon juice.
Pour into glasses. Cool, cover and refrigerate for a few hours before serving with
Biscuits.
